Ingredients:
3 cups of cooked Rotini
1 cup of chopped sun-dried tomatoes
1 cup of sliced mushrooms
2 gloves of garlic
2 tbs of olive oil
1 tbs of butter
2 tbs chopped fresh basil leaves
1 tbs of chopped fresh parsley
3 tbs of grated Parmesan cheese
Directions:
1. Heat the olive oil in the skillet
2. Grate the garlic into hot oil and saute until fragrant
3. Add the mushrooms and the sun-dried tomatoes. Cook until the mushrooms are done.
4. Add the butter, melt all the way…
5. Add the cooked pasta, mix well, cook for 5-7 minutes, stirring occasionally
6. Add the fresh herbs and Parmesan cheese
7. Saute for a couple more minutes…

Looks so good! I used to buy sun dried tomatoes regularly but haven’t in a while… I’ll have to get some next grocery trip! Thank for the inspiration!
