Since my mom was away during her birthday, I wanted to make it up to her with some cupcakes. She loves hazelnuts, so I hunted down some hazelnuts and hazelnut syrup. It took me many phone calls and store visits to find the hazelnut, I finally found them in Whole Foods. Love Whole Foods!!
Ingredients: For cupcakes 1 1/2 cups of flour 3/4 cups of sugar 1 1/2 tsp baking powder
1/4 tsp salt
1/2 cup of butter (leave out for about 30 min to soften)
2 egg yolks
1 tbs hazelnut syrup
1/2 cup plain yogurt
1/2 cup milk
1/2 cup chopped hazelnuts
8 oz cream cheese 3/4 cup brown sugar 1 tsp boiling water 1 tbs hazelnut syrup
~ Preheat oven to 350 degrees F
~ Grease a 12 count muffin tin
1. Beat together butter and sugar for about a minute
2. Beat in the egg and egg yolks
3. Beat in yogurt, milk and syrup
4. Mix in flour, salt, baking powder. Beat for a couple of minutes
