Roasted Broccoli Tomato Feta

 I had extra broccoli left over from making last night’s pork roast, so I’ve decided to make it for lunch but a little different and faster! Came out just as good!!

Ingredients:

2 cups broccoli florets
1 cup cherry tomatoes
2 tbs olive oil
1 tsp lemon juice
parsley, salt, pepper
1/2 cup feta cheese

Directions:
1. Heat the oil in the skillet on medium

2. Add the veggies, lemon juice  and spices. Saute until the desired softness achieved.

3. Mix the hot veggies and the feta in the bowl.  Add a little more olive oil.
4. Serve warm.

Enjoy!!
