This is a wonderful quick breakfast! So enjoy!
3 medium potatos
1/4 cup chopped onion
about 1/4 cup flour
1 table spoon baking powder
butter and sour cream for topping
1. Cut potatoes into 1/2 inch cubes
2. Chop onion
-Preheat the skillet with oil in it, on medium.
3. Add potatoes, onion and egg to the food processor (or blender). Blend well.
4. Add flour, salt, pepper and baking powder. Whisk all. The mixture should be consistency of a pancake better, if too thin add a little bit more flour, if too thick add a little bit of milk.
5. Add the batter to the skillet. Cook for about 3-4 minutes of each side.
Top with butter and sour cream.
