Chicken Cacciatore

 This is a very easy recipe and very quick. For those of you who are tired after work and still want to make a delicious meal for the family!!!

Ingredients:

3 Boneless Skinless Chicken breast
1 Large zucchini
1 Large yellow squash
1/4 cup chopped onion or green onion
mushrooms
garlic (preferably fresh, but pre-minced in a jar is fine too)
Marinara Sauce, ( I have tried several store brands, and I love Classico)
Spaghetti

Directions:
1 – Cook spaghetti in a separate pot,
while pasta is cooking…
2 – Cube the chicken breast into about 1/2 inch cubes
3 – Preheat the pan with veggie oil (on medium….always cook on medium :)
4 – Shred the garlic and add to the pan. Cook until fragrant.
5 – Add chicken into the pan…salt pepper and cover. Stir occationally

6 – While chicken is cooking, cut the zucchini, squash and mushrooms. Slice onion thin, or mince.

7 – When chicken in about half way done… add onion first….cook a few minutes
8 – Add veggies and cook until chicken is fully done and veggies are to the desirable cooked level as well.

I like to cook it all covered because more juices are retained.
9- When chicken and veggies are cooked, add marinara. Lower the stove to low medium. Cook for a few more minutes.

10- Drain pasta and place it back into the pot you cooked it in.
11-After chicken and veggies simmered with the marinara for about 5 minuted just toss the entire content of the pan into the pot with pasta. Mix all.

12- Add some parm cheese on the top when serving.
